Pineapple Mousse is a contribution of Sadaf Afshan for Food Recipe Contest on Den of Delights.
- Sugar 4 tbsp
- Cream 250 ml
- Milk 750 ml
- Icing Sugar 2-3 tbsp
- Pineapple 1.5 cup
- Pineapple Syrup 4-5 tbsp
- Custard Powder 3 tbsp
Mix half cup milk with 3 tbsp custard powder and 4 tbsp sugar until it forms a smooth paste. Boil the remaining milk.
When it comes to a full boil remove from heat and add the custard paste, stirring constantly to avoid lumps .
Return to medium heat and bring to a boil again while stirring constantly. Simmer for about 3-4 minutes.Cool the custard completely.
Beat the whipping cream along with the icing sugar with an electric mixer until it's a bit fluffy.
Add the cooled custard and beat on low speed until the whole mixture is smooth and fluffy.
Add the pineapple juice and beat again till it's combined.Gently fold in the pineapple chunks.
Refrigerate for a few hours before serving.
