Palak Paneer – A popular intercontinental recipe, purely vegetarian meal of spinach and cheese. A iron and calcium rich meal to fulfill your body nutritional requirement.
- Salt to taste
- Cream 1 cup
- Onion 1
- Crushed Red Chilli 1 tbsp
- Lemon peel 2-3 tbsp
- Green Chillies 4-5
- Chopped Garlic 2-3 cloves
- Milk 1 liter
- Cumin Seeds 1 tbsp
- All Spice 1 tbsp
- Spinach 3 kg
- Cooking Oil 1/2 cup
Rinse spinach in water 3–4 times to wash it properly.
Finely slice onion and saute’ in hot oil. Do not brown them.
In a separate pan, boil water and boil spinach in it for 3 minutes
Put the boiled spinach in tap water to cool it to preserve its bright green color.
Now combine onion, spinach and green chili and blend/grind them together.
Boil milk and add vinegar or lemon juice to it.
Simmer it till it curdles.
Now hang the curdled milk in a muslin so all the whey properly drains out.
Then cut the cheese into cubes. And if desired, soak them in water to keep them soft. And add cubes at the time ofserving.
Heat rest of the oil in a pan and fry garlic and cumin seeds.
Add spinach, red chili and salt and cook on medium heat.
In the end, add cream.
When ready, takeout in a serving bowl and sprinkle all spice powder and cheese.
Serve hot with naan or chapati.
