Noodle Basket, a recipe from a Facebook Den of Delights subscriber, is a submission for the Recipe Contest.
- For Filling
- Chicken sliced 500 grams
- Mushroom ½ cup
- Onion 1 (chopped)
- Capsicum 1 (sliced)
- Garlic 2 to 3 cloves
- Tomato 2 (sliced)
- Black pepper 1tsp (crushed)
- Turmeric ½ tsp
- Corn flour 2 tbsp
- Stock 1 cup
- Soya sauce 2 tbsp
- Oil ½ cup
- Salt as required
For noodles: Boil water in a large pot. Add salt and add the noodles along with oil. Cook until the noodles are done.
When the noodles is done, remove the pot from the burner immediately and carefully pour the contents into a colander in the sink.
Put the colander under running cold water to prevent the noodles from sticking.
Heat oil in a wok. Place the noodles between two sieves and deep fry. The noodles basket is ready.
For Filling: Heat oil in a pan. Add onion and garlic. Add the chicken pieces and fry till tender.
Now add black pepper, turmeric powder, capsicum, tomatoes, salt, soyasauce, mushrooms, chciken stock and water. Cook the mixture.
Add corn flour mixed in water and pour into the mixture stirring continuously.
When the mixture thickens turn the flame off.
Pour onto the noodles basket and serve.
