Ingredients
- Sugar 6 tbsp
- Lemon peel 1 tsp
- Milk 2 cups
- Egg Yolk 2
- Butter 2 tbsp
- Flour 1 tbsp (heaped)
- Biscuits 2 cups (coarsely chopped)
- Gelatin powder 1
- Lemon Juice 3 tbsp
Method
Step 1
Crush 2 cups biscuits, mix with 2 tbsp melted butter, spread in a 8 inch pie plate, mix together 2 eggs yolk, 6 tbsp sugar and 1 tbsp flour, add 2 cups milk to this mixture and cook over low flame, stirring continuously till thick, dissolve 1 ½ tbsp gelatin in ¼ cup water.
Step 2
Add in 3 tbsp lemon juice, mix gelatin mixture to the prepared custard.
Step 3
Beat 2 egg white stiff, fold in the prepared custard with 1 tsp lemon peel, spread mixture on top of the biscuit base, chill till set.
Step 4
Decorate with whipped cream.
