Coconut White Cake gives you a great taste of fresh coconut. It is very easy to bake a coconut cake.
- Vinegar 1 tbsp
- Caster Sugar 1-1/3 cup
- Milk 1-1/3 cup, 2 tbsp
- Butter 150 gm , 2 tbsp
- Coconut 1/4 cup, 2 tbsp
- Icing Sugar 1 tbsp
For Butter Milk: In a jug pour milk and add vinegar(let it rest, milk will be change into butter milk after few minutes).
Pre-heat oven at 180 degree C.
In a bowl sift together; plain flour, baking soda, baking powder and pinch of salt mix and set aside.
Beat butter and caster sugar in a bowl until light and fluffy.
Now add eggs white, beat well.
Pour some butter milk and beat for 1 minute.
Add coconut and beat again for 2 minutes.
Now gradually add the flour mixture and butter milk.
Once flour is fully incorporated stop the mixer (make sure the cake batter is blended well).
Pour into a greased and floured 8 X 8 inch cake pan.
Bake for about 35-40 minutes at 180 degrees C.
Take the cake out of the oven when it's done and allow it to cool.
Prepare the frosting: by beating caster sugar, milk, butter and flaked coconut in a large bowl.
Beat until it's the desire thickness (for thinner frosting, add more milk and for thicker frosting, add less).
Spread the frosting all over the top of the cake.
