Bharwan Aloo – A very interesting potato curry recipe. Round potatoes are stuffed with spices and then cooked in curry. Enjoy as a side dish with fried fish and chutney.
- Salt 1,1/2 tbsp
- Coriander Powder 1/2 tbsp
- Potatoes 1/2 kg
- Onion 2
- Turmeric Powder 1/2 tbsp
- Cumin Seeds 1/2 tbsp powder
- All Spice 1 tbsp
- Chili Powder 1 tbsp
- Coriander Leaves Chopped 1/2 bunch
- Cooking Oil 4 tbsp
Peel potatoes and slit so that one side is intact.
Mix half the salt, chilli powder, all spice and stuff into the slit potatoes.
Reserve it and fry cumin seeds in 4 tbsp oil.
Add chopped onions till golden.
Add remaining chilli powder, turmeric powder, all spice, cumin seeds and coriander powder and salt to taste.
Arrange potatoes neatly in the gravy and cook till done without any water.
Garnish with coriander leaves and a pinch of all spice.
