Afghani Palao Recipe is a contribution of “Amna Khan” for Food Recipe Contest on Den of Delights.
- Salt as required
- Chicken 1 kg
- Cumin Powder 1 tsp
- Carrot 1 (shredded)
- Sugar 1 tbsp
- Rice ½ kg
- Onion 1 med chopped
- Clove (Long) 3-4
- Yogurt 1 cup
- Crushed Black Pepper 1 tsp
- Raisins ½ cup
- Cinnamon 2 piece
- Crushed Garlic 2-3 tbsp
- Cardamom Powder ½ tsp
- Cooking Oil 2-3 tbsp
Wash and soak ½ kg rice and set aside for 1-2 hours. In a pan heat 2-3 tbsp oil and put 2 pieces of cinnamon with 3-4 cloves and fry it.
Now add 1 onion, 2-3 cloves of crushed garlic and 1 kg chicken fry it until the oil floats on top.
Then add 1cup yogurt, 1tsp black pepper, ½ tsp cardamom and salt to taste and 1 tsp whole cumin, mixe well.
When the mixture dries add 1or 1 ½ jug water. When the chicken becomes tender and stock is ready, then add rice.
When the rice is fried then simmer it.
Now in another pan fry 1 shredded carrot, ½ cup raisins, 1tbsp sugar and water as required for 3 to 5 minutes.
Now put the mixture on top of the pulao and serve it.
